DF Mushroom Spinach Soup
This is one of my FAVORITES! Add 8 cups of water to a large pot and stir in bag of ingredients. Cook on Medium heat, covered, but stirring often. Once mushrooms are tender and rehydrated, turn heat up to med/high and allow to boil and thicken, still stirring often. Soup will thicken slightly more once taken off the heat. Serve with croutons and shredded Italian Cheese blend (Parmesan, Romano, and Asiago)!
TRY ADDING: shredded beef, shrimp, sauteed onions, or 1 cup cooked white or wild rice.
