Coconut Crunch Cookies
These are AMAZING! Preheat oven to 350°F. In a mixing bowl, add 1 lightly beaten egg, ½ cup softened butter, 1 teaspoon vanilla, and cookie mix, stir until well combined. Place in fridge for 30+ min. Shape dough into 1-inch balls, placing balls 2 inches apart on an ungreased cookie sheet. Bake for 10 to 12 minutes or until edges are light brown. Cool for 2 minutes on cookie sheet. Transfer cookies to a wire rack and let cool. Yields approx. 3 dozen.
BARS: 350°F. oven. Add 1 egg and 4 TBSP butter to recipe above. Place in greased 9x13 baking dish. Bake for @20 min. Enjoy!
